Zucchini rounds dipped in egg and flour and pan-fried until golden, with a soy dipping sauce.

Ingredients

  • 2 zucchini, sliced 1/4 inch thick
  • 1/2 teaspoon salt
  • 1/2 cup flour
  • 3 eggs, beaten
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon sugar
  • 1 green onion, sliced

Steps

  1. Step 1. Sprinkle the zucchini with the salt and let it sit for 10 minutes. Pat dry with paper towels.

  2. Step 2. Whisk the soy sauce, vinegar, sugar, and green onion for the dipping sauce.

  3. Step 3. Dip each slice in the flour, shake off the extra, then dip in the egg.

  4. Step 4. Fry in the oil over medium heat for 2 to 3 minutes per side, until golden. Add more oil as needed. Serve warm with the dipping sauce.
