Brownies

Chewy chocolate squares with walnuts.

Ingredients

  • 1 cup sugar
  • ¼ cup melted butter
  • 1 egg, unbeaten
  • 2 squares Baker’s chocolate, melted
  • ¾ teaspoon vanilla
  • ½ cup flour
  • ½ cup walnut meats, cut in pieces

Steps

  1. Step 1. Mix ingredients in order given.

  2. Step 2. Line a seven-inch square pan with paraffine paper.

  3. Step 3. Spread mixture evenly in pan and bake in a slow oven.

  4. Step 4. As soon as taken from oven turn from pan, remove paper, and cut cake in strips, using a sharp knife. If these directions are not followed paper will cling to cake, and it will be impossible to cut it in shapely pieces.

These recipes were written in 1910, when ovens had no dials. A slow oven is roughly 250 to 325°F (120 to 165°C), a moderate oven roughly 350 to 375°F (175 to 190°C), and a hot oven roughly 400 to 450°F (200 to 230°C). Old advice on eggs and meat can differ from today's food-safety guidance, so cook until done.
