Cheese Quesadillas

Flour tortillas filled with melted cheese and crisped in a pan. Ready in 10 minutes.

Ingredients

  • 4 flour tortillas (8-inch)
  • 2 cups shredded Monterey Jack or Oaxaca cheese
  • 1/2 cup canned black beans, drained and rinsed
  • 2 green onions, sliced
  • 1 tablespoon butter or oil
  • 1/2 cup salsa, to serve
  • 1/4 cup sour cream, to serve

Steps

  1. Step 1. Sprinkle half of each tortilla with cheese, beans, and green onion. Fold the tortilla in half.

  2. Step 2. Melt a little of the butter in a skillet over medium heat.

  3. Step 3. Cook the quesadillas for 2 to 3 minutes per side, until golden and the cheese is fully melted.

  4. Step 4. Cut into wedges and serve with salsa and sour cream.
