Mediterranean Tuna Salad

A mayonnaise-free tuna salad with olives, capers, tomatoes, and lemon.

Ingredients

  • 2 cans (5 oz each) tuna in olive oil, drained
  • 1/2 cup halved cherry tomatoes
  • 1/4 cup chopped olives
  • 2 tablespoons capers
  • 1/4 cup diced red onion
  • 2 tablespoons chopped parsley
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Steps

  1. Step 1. Flake the tuna into a bowl.

  2. Step 2. Add the tomatoes, olives, capers, onion, and parsley.

  3. Step 3. Add the oil, lemon juice, pepper, and salt and toss gently.

  4. Step 4. Serve over greens, in pita, or with crackers.
