Refried Beans

Frijoles refritos

Creamy pinto beans mashed in a skillet with onion and garlic. Quick to make from canned beans.

Ingredients

  • 2 cans (15 oz each) pinto beans, drained, liquid reserved
  • 2 tablespoons lard or vegetable oil
  • 1/2 white onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 cup bean liquid or water, as needed
  • 1/4 cup crumbled cotija or queso fresco, to serve, optional

Steps

  1. Step 1. Heat the lard in a large skillet over medium heat. Cook the onion for 4 minutes, until soft. Add the garlic and cook for 30 seconds.

  2. Step 2. Add the beans and mash them with a potato masher as they cook.

  3. Step 3. Add the reserved bean liquid a little at a time and cook for 8 to 10 minutes, stirring, until creamy and thick.

  4. Step 4. Season with the salt, top with the cheese, and serve warm.
