Tomato Bruschetta

Toasted garlic bread topped with fresh tomatoes, basil, and olive oil.

Ingredients

  • 1 baguette or ciabatta, sliced 1/2 inch thick
  • 4 ripe tomatoes, diced
  • 2 cloves garlic, 1 minced and 1 halved
  • 1/4 cup chopped fresh basil
  • 3 tablespoons extra-virgin olive oil, divided
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon salt

Steps

  1. Step 1. Stir the tomatoes, minced garlic, basil, 2 tablespoons of oil, vinegar, and salt. Let it sit for 15 minutes.

  2. Step 2. Heat the broiler. Brush the bread slices with the remaining oil.

  3. Step 3. Toast for 2 to 3 minutes per side until golden. Rub each slice with the cut side of the halved garlic.

  4. Step 4. Spoon the tomato mixture on top just before serving.
