Caribbean Coconut Rice

Fluffy rice steamed in coconut milk with a pinch of salt and sugar.

Ingredients

  • 2 cups long-grain rice, rinsed
  • 1 can (13.5 oz) coconut milk
  • 1 3/4 cups water
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 sprig thyme, optional

Steps

  1. Step 1. Combine the rice, coconut milk, water, salt, sugar, and thyme in a pot.

  2. Step 2. Bring to a boil, then cover and cook on low for 18 to 20 minutes.

  3. Step 3. Rest 5 minutes.

  4. Step 4. Remove the thyme and fluff with a fork.
