Maduros (Fried Sweet Plantains)

Very ripe plantains fried until caramelized and sticky-sweet.

Ingredients

  • 3 very ripe plantains with mostly black skin
  • 1/3 cup oil for frying
  • 1 pinch salt
  • Lime wedges, to serve

Steps

  1. Step 1. Peel the plantains and slice on the diagonal 1/2 inch thick.

  2. Step 2. Heat the oil in a large pan over medium heat.

  3. Step 3. Fry in a single layer for 2 to 3 minutes per side until deep golden brown and caramelized.

  4. Step 4. Drain on paper towels and sprinkle with salt.
