Tostones

Twice-fried green plantain discs, crisp outside and starchy inside. Salt them while hot.

Ingredients

  • 3 green plantains
  • 1 cup oil for frying
  • 1 teaspoon salt
  • 2 cloves garlic, minced
  • 1/4 cup warm water
  • Lime wedges, to serve

Steps

  1. Step 1. Peel the plantains and cut into 1-inch rounds.

  2. Step 2. Heat the oil to 325°F and fry the rounds for 3 minutes per side until pale gold. Drain.

  3. Step 3. Smash each with a flat bottom of a glass to 1/3 inch thick. Dip in the salted garlic water.

  4. Step 4. Return to the oil at 375°F and fry for 2 minutes per side until deep golden. Drain, salt, and serve with lime.
