Skillet Cornbread
Golden cornbread with crisp edges, baked in a hot cast-iron skillet.

Ingredients
- 1 1/2 cups cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 1/4 cups buttermilk
- 2 eggs
- 1/3 cup melted butter
- 2 tablespoons butter, for the skillet
Steps
Step 1. Heat the oven to 425°F with a 10-inch cast-iron skillet and the 2 tablespoons of butter inside.
Step 2. Whisk the cornmeal, flour, sugar, baking powder, and salt.
Step 3. Stir in the buttermilk, eggs, and melted butter until just combined.
Step 4. Pour into the hot skillet and bake for 20 to 25 minutes until golden and a toothpick comes out clean.
