Gambas al Ajillo

Shrimp sizzling in olive oil with plenty of garlic and chili. Eat it with bread to soak up the oil.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1/2 cup olive oil
  • 8 cloves garlic, sliced
  • 2 dried chilies, or 1/2 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 2 tablespoons dry sherry
  • 2 tablespoons chopped parsley
  • Crusty bread, to serve

Steps

  1. Step 1. Pat the shrimp dry and season with the salt.

  2. Step 2. Heat the oil with the garlic and chilies in a skillet over medium heat until the garlic is gold, about 3 minutes.

  3. Step 3. Add the shrimp and cook for 2 minutes per side until pink and opaque.

  4. Step 4. Add the sherry and parsley and serve sizzling with bread.
