Calamares Fritos
Light, crisp fried squid rings with lemon. A seaside classic.

Ingredients
- 1 lb squid, cleaned and cut in rings
- 1 cup milk
- 1 cup flour
- 1/2 teaspoon salt
- 1/2 teaspoon smoked paprika
- 3 cups oil for frying
- 1 lemon, cut in wedges
- Aioli, to serve
Steps
Step 1. Soak the squid in the milk for 30 minutes. Drain and pat dry.
Step 2. Mix the flour, salt, and paprika. Toss the squid in it.
Step 3. Heat the oil to 375°F. Fry in small batches for 1 to 2 minutes until golden and the squid is opaque and cooked through, not rubbery.
Step 4. Drain, salt, and serve with lemon and aioli.
