Shrimp Saganaki

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 2 tablespoons ouzo or white wine
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 6 oz feta, crumbled
  • 2 tablespoons chopped parsley

Steps

  1. Step 1. Heat the oil in an oven-safe skillet and cook the onion and garlic for 5 minutes.

  2. Step 2. Add the ouzo and let it bubble for 1 minute. Add the tomatoes, oregano, and salt and simmer 10 minutes.

  3. Step 3. Nestle in the shrimp and top with feta. Bake at 400°F or simmer for 8 to 10 minutes until the shrimp are pink and opaque.

  4. Step 4. Top with parsley and serve with bread.
