Ingredients

  • 1 lb ground lamb
  • 1 lb ground beef
  • 1 onion, grated and squeezed dry
  • 5 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 2 teaspoons dried marjoram
  • 1 teaspoon ground cumin
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 6 pitas
  • Tzatziki, tomato, and red onion, to serve

Steps

  1. Step 1. Heat the oven to 325°F. Mix the lamb, beef, onion, garlic, oregano, marjoram, cumin, salt, and pepper in a food processor until sticky and fine.

  2. Step 2. Press firmly into a loaf pan and bake in a water bath for 55 to 60 minutes, until it reaches 160°F and is cooked through.

  3. Step 3. Rest 10 minutes, pour off the fat, then slice very thin.

  4. Step 4. Brown the slices in a hot pan for 2 minutes per side. Serve in pita with tzatziki, tomato, and onion.
