Gyudon

牛丼

A rice bowl topped with thin beef and onions simmered in a sweet soy broth.

Ingredients

  • 1 lb thinly sliced beef ribeye or chuck
  • 1 large onion, sliced thin
  • 1 1/4 cups dashi stock
  • 1/4 cup soy sauce
  • 3 tablespoons mirin
  • 2 tablespoons sugar
  • 1 tablespoon grated ginger
  • 4 bowls cooked rice
  • Pickled red ginger, to serve

Steps

  1. Step 1. Simmer the dashi, soy sauce, mirin, sugar, and ginger in a pan for 2 minutes.

  2. Step 2. Add the onion and cook for 8 minutes until soft.

  3. Step 3. Add the beef and cook for 3 to 4 minutes, separating the slices, until cooked through and no longer pink.

  4. Step 4. Spoon the beef and some sauce over rice. Top with pickled ginger.
