Katsu Curry

Crispy chicken cutlet over rice with a thick, mild, sweet Japanese curry sauce.

Ingredients

  • 2 tablespoons oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 3 cups water
  • 1 package (3.5 oz) Japanese curry roux, broken in pieces
  • 1 apple, grated
  • 4 boneless chicken breasts, pounded thin
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1 1/2 cups panko
  • 3 cups oil for frying
  • 4 cups cooked rice

Steps

  1. Step 1. Cook the onion in the oil for 6 minutes. Add the carrots, potatoes, and water and simmer for 15 minutes.

  2. Step 2. Turn off the heat, stir in the roux and apple until dissolved, then simmer 10 minutes until thick.

  3. Step 3. Dredge the chicken in flour, egg, and panko.

  4. Step 4. Fry at 340°F for 3 to 4 minutes per side until golden and cooked through (165°F).

  5. Step 5. Slice the cutlets and serve over rice with the curry.
