Horchata

A cold, creamy rice drink with cinnamon and vanilla. Soak the rice overnight.

Ingredients

  • 1 cup long-grain white rice
  • 1 cinnamon stick
  • 4 cups hot water
  • 1 cup milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • Ice cubes
  • Ground cinnamon, to serve

Steps

  1. Step 1. Grind the rice in a blender for 1 minute, just until broken up. Put it in a bowl with the cinnamon stick and hot water. Soak for at least 8 hours, or overnight.

  2. Step 2. Remove the cinnamon stick, then blend the rice and water for 2 minutes until very smooth.

  3. Step 3. Strain through a fine strainer or cheesecloth into a pitcher, pressing out the liquid.

  4. Step 4. Stir in the milk, sugar, and vanilla. Chill and stir before pouring over ice with a dusting of cinnamon.
