Chewy fried pancakes with a molten brown sugar and cinnamon filling. A winter street food.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup warm milk
  • 2 tablespoons sugar
  • 1 teaspoon instant yeast
  • 1/2 teaspoon salt
  • 3/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup chopped walnuts
  • 2 tablespoons vegetable oil, plus more for the pan

Steps

  1. Step 1. Stir the flour, warm milk, sugar, yeast, and salt into a sticky dough. Cover and let rise for 1 hour, until doubled.

  2. Step 2. Mix the brown sugar, cinnamon, and walnuts for the filling.

  3. Step 3. Oil your hands and divide the dough into 8 balls. Flatten each one, add 2 tablespoons of filling, and pinch the edges closed.

  4. Step 4. Heat a little oil in a pan over medium-low heat. Place a ball seam-side down and flatten it with a spatula. Cook 2 to 3 minutes per side until golden. The filling will be very hot, so let it cool a minute.
