Oi Muchim
오이무침
A crunchy, spicy cucumber side dish that takes five minutes and goes with anything.
Serves 4

Ingredients
- 4 small cucumbers, sliced 1/4 inch thick
- 1 teaspoon salt
- 1 tablespoon gochugaru
- 1 tablespoon rice vinegar
- 2 teaspoons sugar
- 1 teaspoon soy sauce
- 2 cloves garlic, minced
- 1 green onion, sliced
- 1 teaspoon sesame oil
- 1 teaspoon toasted sesame seeds
Steps
Step 1. Toss the cucumber with the salt and let it sit for 10 minutes. Squeeze out the extra water and pat dry.
Step 2. Mix the gochugaru, vinegar, sugar, soy sauce, garlic, and green onion in a bowl.
Step 3. Add the cucumber and toss to coat. Finish with the sesame oil and seeds.
Step 4. Serve right away for the best crunch, or chill for up to a day.
