Thai Fried Rice

Simple fried rice with egg, tomato, and onion, served with lime and cucumber slices.

Ingredients

  • 3 cups cold cooked jasmine rice
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1/2 lb shrimp, peeled
  • 2 eggs
  • 1/2 onion, sliced
  • 1 tomato, cut in wedges
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 2 green onions, sliced
  • 1 lime, cut in wedges
  • Cucumber slices, to serve

Steps

  1. Step 1. Heat the oil in a wok over high heat. Cook the garlic for 10 seconds, then the shrimp for 2 minutes, until pink and opaque.

  2. Step 2. Push to the side, crack in the eggs, and scramble until set.

  3. Step 3. Add the onion and tomato and stir for 1 minute. Add the rice, breaking up clumps.

  4. Step 4. Pour in the soy sauce, fish sauce, and sugar. Toss for 3 minutes until hot and lightly browned.

  5. Step 5. Top with green onions and serve with lime and cucumber.
