Creamy Tomato Soup

Smooth tomato soup with a touch of cream, made from pantry staples. Perfect with grilled cheese.

Ingredients

  • 3 tablespoons butter
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cans (28 oz each) whole peeled tomatoes
  • 2 cups vegetable or chicken stock
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 cup heavy cream
  • 1/4 cup chopped basil

Steps

  1. Step 1. Melt the butter and cook the onion for 8 minutes. Add the garlic for 1 minute.

  2. Step 2. Add the tomatoes with their juice, the stock, sugar, and salt. Simmer for 20 minutes.

  3. Step 3. Blend until smooth with an immersion blender.

  4. Step 4. Stir in the cream and warm through. Top with basil.
