Potage Parmentier

A smooth, creamy leek and potato soup. Simple, comforting, and endlessly useful.

Ingredients

  • 3 tablespoons butter
  • 3 leeks, white and light green parts, sliced and washed
  • 1 onion, diced
  • 1 lb potatoes, peeled and cubed
  • 4 cups vegetable or chicken stock
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/2 cup cream, optional
  • 2 tablespoons chopped chives

Steps

  1. Step 1. Melt the butter and cook the leeks and onion over low heat for 10 minutes until soft but not browned.

  2. Step 2. Add the potatoes, stock, bay leaf, and salt. Simmer for 20 minutes until the potatoes are very soft.

  3. Step 3. Remove the bay leaf. Blend until smooth with an immersion blender.

  4. Step 4. Stir in the pepper and cream. Top with chives.
