Chana Masala

Chickpeas simmered in a tangy, spiced tomato and onion gravy. Naturally vegan.

Ingredients

  • 3 tablespoons vegetable oil
  • 1 onion, finely diced
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 green chili, slit
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1 can (14 oz) crushed tomatoes
  • 2 cans (15 oz each) chickpeas, drained
  • 1 cup water
  • 1 teaspoon salt
  • 1 tablespoon lemon juice
  • 1/4 cup chopped cilantro

Steps

  1. Step 1. Cook the onion in the oil for 8 minutes until golden. Add the garlic, ginger, and chili for 1 minute.

  2. Step 2. Stir in the coriander, cumin, and turmeric for 30 seconds.

  3. Step 3. Add the tomatoes and cook for 8 minutes until they break down and the oil separates.

  4. Step 4. Add the chickpeas, water, and salt. Simmer for 15 minutes, mashing a few chickpeas to thicken.

  5. Step 5. Stir in the garam masala, lemon juice, and cilantro.
