Chicken Tikka Masala

Grilled yogurt-marinated chicken pieces in a spiced tomato and cream sauce.

Ingredients

  • 1.5 lb boneless chicken breast or thighs, cut in chunks
  • 3/4 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons tikka masala spice blend, divided
  • 2 tablespoons vegetable oil
  • 1 onion, finely diced
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 can (14 oz) crushed tomatoes
  • 3/4 cup heavy cream
  • 1 teaspoon salt
  • 1/4 cup chopped cilantro

Steps

  1. Step 1. Mix the yogurt, lemon juice, and 1 tablespoon of the spice blend. Toss with the chicken and marinate at least 1 hour.

  2. Step 2. Broil or grill the chicken for 10 to 12 minutes, turning, until charred in spots and cooked through (165°F).

  3. Step 3. Cook the onion in the oil for 8 minutes. Add the garlic, ginger, and remaining spice blend for 1 minute.

  4. Step 4. Add the tomatoes and salt. Simmer for 15 minutes, then blend smooth if you like.

  5. Step 5. Stir in the cream and chicken and simmer for 5 minutes. Top with cilantro.
