Chicken Afritada

A tomato-based chicken stew with potatoes, carrots, and bell peppers.

Ingredients

  • 2 lb bone-in chicken pieces
  • 2 tablespoons oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 can (14 oz) tomato sauce
  • 1 cup water or chicken stock
  • 2 tablespoons fish sauce or soy sauce
  • 2 potatoes, cut in chunks
  • 2 carrots, sliced
  • 1 red bell pepper, in strips
  • 2 bay leaves
  • 1/2 cup green peas, optional

Steps

  1. Step 1. Brown the chicken in the oil for 6 minutes. Move to a plate.

  2. Step 2. Cook the onion and garlic for 3 minutes. Add the tomato sauce, water, fish sauce, and bay leaves.

  3. Step 3. Return the chicken and simmer, covered, for 15 minutes.

  4. Step 4. Add the potatoes and carrots and simmer 15 minutes. Add the bell pepper and peas for 5 minutes, until the chicken is cooked through (165°F) and the vegetables are tender.
