Pork Menudo

A Filipino pork and liver stew with tomato, potatoes, carrots, and raisins.

Ingredients

  • 1.5 lb pork shoulder, diced small
  • 1/2 lb pork or chicken liver, diced
  • 2 tablespoons oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 can (14 oz) tomato sauce
  • 1 1/2 cups water
  • 2 tablespoons soy sauce
  • 2 potatoes, diced
  • 2 carrots, diced
  • 1 red bell pepper, diced
  • 1/4 cup raisins
  • 2 bay leaves
  • 1/2 cup chickpeas, optional

Steps

  1. Step 1. Brown the pork in the oil for 8 minutes. Add the onion and garlic for 3 minutes.

  2. Step 2. Add the tomato sauce, water, soy sauce, and bay leaves. Simmer, covered, for 30 minutes.

  3. Step 3. Add the potatoes and carrots and cook 10 minutes. Add the liver, bell pepper, raisins, and chickpeas.

  4. Step 4. Cook 8 to 10 minutes until the pork and liver are cooked through (160°F) with no pink.
