Galinhada

Brazilian chicken and rice cooked in one pot with turmeric, garlic, and a little hot pepper.

Ingredients

  • 2 lb bone-in chicken pieces
  • 2 tablespoons lime juice
  • 1 teaspoon salt, divided
  • 2 tablespoons oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 4 cloves garlic, minced
  • 1/2 teaspoon turmeric
  • 2 cups long-grain white rice
  • 4 cups hot chicken stock
  • 1 cup green peas
  • 1/4 cup chopped parsley

Steps

  1. Step 1. Marinate the chicken in the lime juice and 1/2 teaspoon of salt for 15 minutes.

  2. Step 2. Brown the chicken in the oil for 8 minutes. Add the onion, pepper, garlic, and turmeric for 4 minutes.

  3. Step 3. Add the rice and stir for 1 minute. Pour in the stock and remaining salt.

  4. Step 4. Cover and simmer on low for 25 to 30 minutes, until the rice is tender and the chicken is cooked through (165°F). Stir in the peas for the last 5 minutes. Top with parsley.
