Ingredients

  • 1.5 lb firm white fish fillets, cut in large chunks
  • 3 tablespoons lime juice
  • 1 teaspoon salt, divided
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 3 tomatoes, sliced
  • 1 can (13.5 oz) coconut milk
  • 1 tablespoon palm oil (dendê), optional
  • 1/2 cup chopped cilantro
  • 1 chili, minced, optional

Steps

  1. Step 1. Toss the fish with the lime juice and 1/2 teaspoon of salt. Rest 15 minutes.

  2. Step 2. Layer the onion, peppers, garlic, and tomatoes in a wide pot with the olive oil. Cook over medium heat for 8 minutes.

  3. Step 3. Add the fish on top and pour in the coconut milk. Cover and simmer gently for 10 to 12 minutes, until the fish is opaque and flakes easily.

  4. Step 4. Drizzle with the palm oil, add the cilantro and chili, and season. Serve with rice and farofa.
