Ingredients

  • 2 lb cassava or potatoes, peeled and cut in chunks
  • 4 tablespoons butter
  • 1/2 cup milk
  • 1 teaspoon salt, divided
  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup crushed tomatoes
  • 1/2 teaspoon cumin
  • 1/4 cup chopped parsley
  • 1 1/2 cups shredded mozzarella

Steps

  1. Step 1. Boil the cassava for 25 minutes until soft. Mash with the butter, milk, and 1/2 teaspoon of salt until smooth.

  2. Step 2. Heat the oven to 375°F. Cook the beef for 8 minutes until browned and no longer pink. Add the onion and garlic for 4 minutes, then the tomatoes, cumin, and remaining salt. Simmer for 8 minutes. Stir in the parsley.

  3. Step 3. Spread the beef in a baking dish. Cover with the mash and sprinkle with cheese.

  4. Step 4. Bake for 20 minutes until bubbling, golden, and hot throughout (165°F).
