Ingredients

  • 1 1/2 lb baby bok choy, halved lengthwise
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 tablespoon water
  • 1 teaspoon sesame oil

Steps

  1. Step 1. Wash the bok choy well, since grit hides near the base, and drain it.

  2. Step 2. Heat the oil in a wok over high heat. Add the garlic and stir for 15 to 20 seconds, until fragrant.

  3. Step 3. Add the bok choy and stir-fry for 1 minute. Add the salt, sugar, and water, cover, and cook for 1 to 2 minutes, until the stems are tender but still crisp.

  4. Step 4. Drizzle with the sesame oil and serve right away.

Original Yoribang write-ups of Chinese home cooking. Shaoxing wine is a Chinese cooking wine (dry sherry works instead). Doubanjiang is fermented chili bean paste, and Sichuan peppercorns give a tingling, numbing heat. Light soy sauce adds salt, and dark soy sauce adds color. Most are sold at Asian grocery stores.
