Dry-Fried Green Beans

Green beans blistered in a hot pan until wrinkled, then tossed with garlic and a little pork.

Ingredients

  • 1 lb green beans, trimmed
  • 3 tablespoons vegetable oil, divided
  • 1/4 lb ground pork
  • 3 cloves garlic, minced
  • 1 tablespoon minced ginger
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 tablespoon Shaoxing wine
  • 1/4 teaspoon white pepper

Steps

  1. Step 1. Heat 2 tablespoons of the oil in a wok over high heat. Fry the beans for 6 to 8 minutes, stirring, until blistered and wrinkled. Remove.

  2. Step 2. Add the remaining oil and cook the pork for 3 minutes, breaking it up, until browned and no longer pink.

  3. Step 3. Add the garlic and ginger and stir for 30 seconds.

  4. Step 4. Return the beans with the soy sauce, sugar, wine, and pepper. Toss for 1 minute until the pork is cooked through and the beans are glazed.
