Roasted Garlic Mashed Potatoes
Mashed potatoes with sweet, mellow roasted garlic and a little cream cheese for extra silkiness.

Ingredients
- 1 head garlic
- 1 tablespoon olive oil
- 3 lb Yukon Gold potatoes, peeled and cubed
- 1 tablespoon salt, for the water
- 6 tablespoons butter
- 4 oz cream cheese, softened
- 1/2 cup warm milk
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
Steps
Step 1. Heat the oven to 400°F. Cut the top off the garlic head, drizzle with the oil, wrap in foil, and roast 40 minutes until soft.
Step 2. Boil the potatoes in salted water for 15 to 20 minutes until tender. Drain and steam dry for 1 minute.
Step 3. Squeeze the garlic cloves into the potatoes and mash with the butter and cream cheese.
Step 4. Mix in the warm milk, salt, and pepper until smooth.
