Pommes Purée

Silky French mashed potatoes made with plenty of butter and warm milk.

Ingredients

  • 2 lb Yukon Gold potatoes, peeled and cut in chunks
  • 1 tablespoon salt, for the water
  • 8 tablespoons butter, cubed
  • 3/4 cup warm milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper

Steps

  1. Step 1. Boil the potatoes in salted water for 20 minutes, until very tender. Drain well.

  2. Step 2. Dry them in the hot pot for 1 minute, then pass through a ricer or food mill.

  3. Step 3. Stir in the butter, then the warm milk, until silky.

  4. Step 4. Season with the salt and pepper and serve right away.
