Shredded poached chicken and cabbage in a lime and fish sauce dressing, topped with herbs and fried shallots.

Ingredients

  • 1 lb boneless chicken breast
  • 4 cups finely shredded cabbage
  • 1 carrot, shredded
  • 1/2 red onion, sliced thin
  • 1/2 cup mint leaves, chopped
  • 1/2 cup cilantro, chopped
  • 3 tablespoons lime juice
  • 3 tablespoons fish sauce
  • 2 tablespoons sugar
  • 1 clove garlic, minced
  • 1 Thai chili, minced
  • 1/4 cup crushed peanuts
  • 2 tablespoons fried shallots

Steps

  1. Step 1. Poach the chicken in simmering water for 15 to 18 minutes, until cooked through (165°F). Cool, then shred.

  2. Step 2. Whisk the lime juice, fish sauce, sugar, garlic, and chili until the sugar dissolves.

  3. Step 3. Toss the cabbage, carrot, onion, and herbs with the chicken and dressing.

  4. Step 4. Top with peanuts and fried shallots. Serve right away.
