Lemongrass Chicken

Ingredients

  • 1.5 lb boneless chicken thighs, cut in bite-size pieces
  • 4 stalks lemongrass, minced
  • 4 cloves garlic, minced
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 2 tablespoons vegetable oil
  • 2 red chilies, sliced
  • 1 onion, sliced
  • 1 tablespoon soy sauce
  • 2 tablespoons chopped cilantro

Steps

  1. Step 1. Toss the chicken with the lemongrass, garlic, fish sauce, and sugar. Marinate for 30 minutes.

  2. Step 2. Heat the oil in a wok over high heat. Add the onion and chilies and stir for 1 minute.

  3. Step 3. Add the chicken and stir-fry for 7 to 8 minutes, until browned and cooked through (165°F).

  4. Step 4. Add the soy sauce and toss. Top with cilantro and serve with rice.
