Ingredients

  • 1 lb pork shoulder, sliced thin
  • 2 stalks lemongrass, minced
  • 3 tablespoons sugar
  • 2 tablespoons fish sauce
  • 3 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 10 oz rice vermicelli
  • 1 cup lettuce, shredded
  • 1 cucumber, cut in matchsticks
  • 1/2 cup mint and cilantro
  • 1/4 cup roasted peanuts, crushed
  • 1/2 cup nuoc cham

Steps

  1. Step 1. Mix the lemongrass, sugar, fish sauce, garlic, and oil. Marinate the pork for at least 1 hour.

  2. Step 2. Grill or pan-sear the pork in a hot pan for 2 to 3 minutes per side, until charred and cooked through with no pink inside.

  3. Step 3. Cook the noodles, drain, and rinse in cold water.

  4. Step 4. Divide the lettuce, noodles, cucumber, and herbs among bowls and top with the pork and peanuts. Spoon over the nuoc cham.
