A crunchy shredded green papaya salad with herbs, peanuts, and a sweet, sour dressing.

Ingredients

  • 3 cups shredded green papaya
  • 1 carrot, shredded
  • 1/2 cup mint leaves
  • 1/2 cup Thai basil leaves
  • 3 tablespoons lime juice
  • 3 tablespoons fish sauce
  • 2 tablespoons sugar
  • 1 clove garlic, minced
  • 1 Thai chili, sliced
  • 1/4 cup roasted peanuts, crushed

Steps

  1. Step 1. Soak the shredded papaya in cold water for 10 minutes, then drain and squeeze dry.

  2. Step 2. Whisk the lime juice, fish sauce, sugar, garlic, and chili until the sugar dissolves.

  3. Step 3. Toss the papaya, carrot, and herbs with the dressing.

  4. Step 4. Top with peanuts. Serve right away.
