Lemon Oregano Roast Chicken
Chicken roasted with lemon, garlic, and oregano until the skin is crisp and the pan juices are golden.

Ingredients
- 3 1/2 lb bone-in chicken pieces
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 6 cloves garlic, minced
- 2 tablespoons dried oregano
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 lb baby potatoes, halved
- 1 lemon, sliced
Steps
Step 1. Mix the oil, lemon juice, garlic, oregano, salt, and pepper. Coat the chicken and marinate at least 1 hour.
Step 2. Heat the oven to 425°F. Spread the potatoes and lemon in a roasting pan and set the chicken on top, skin side up.
Step 3. Roast for 45 to 55 minutes, basting once, until the skin is deep golden and the chicken is cooked through (165°F).
Step 4. Rest 10 minutes and spoon over the pan juices.
