French Lentil Salad

Green lentils tossed with Dijon vinaigrette, carrot, shallot, and herbs. Good warm or cold.

Ingredients

  • 1 cup French green (Le Puy) lentils, rinsed
  • 3 cups water
  • 1 bay leaf
  • 1 carrot, finely diced
  • 1 shallot, minced
  • 1/4 cup chopped parsley
  • 1 tablespoon Dijon mustard
  • 3 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • 1/2 teaspoon salt

Steps

  1. Step 1. Simmer the lentils with the water and bay leaf for 20 to 25 minutes, until tender but still holding their shape. Drain.

  2. Step 2. Whisk the mustard, vinegar, oil, and salt.

  3. Step 3. Toss the warm lentils with the dressing, carrot, shallot, and parsley.

  4. Step 4. Taste and add salt. Serve warm or chill.
