Salade Niçoise

A composed salad of tuna, green beans, potatoes, eggs, tomatoes, and olives with a mustard vinaigrette.

Ingredients

  • 1 lb small potatoes, halved
  • 1/2 lb green beans, trimmed
  • 4 eggs
  • 2 cans (5 oz each) good tuna in olive oil, drained
  • 4 tomatoes, cut in wedges
  • 1/2 cup Nicoise or black olives
  • 2 tablespoons capers
  • 1 head butter lettuce
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced

Steps

  1. Step 1. Boil the potatoes for 12 minutes until tender. Lift out. Boil the green beans in the same water for 3 minutes, then cool in ice water.

  2. Step 2. Boil the eggs for 9 minutes, cool, peel, and halve.

  3. Step 3. Whisk the oil, vinegar, mustard, garlic, and a pinch of salt.

  4. Step 4. Arrange the lettuce, potatoes, beans, tomatoes, eggs, tuna, olives, and capers on a platter.

  5. Step 5. Drizzle with the vinaigrette.
