Miso Soup

味噌汁

The everyday Japanese soup: dashi broth, miso, tofu, and wakame, ready in 10 minutes.

Ingredients

  • 4 cups dashi stock
  • 3 tablespoons miso paste
  • 1/2 block (7 oz) soft tofu, cubed
  • 2 tablespoons dried wakame
  • 2 green onions, sliced

Steps

  1. Step 1. Soak the wakame in warm water for 5 minutes and drain.

  2. Step 2. Heat the dashi until it just simmers.

  3. Step 3. Put the miso in a ladle, dip it into the dashi, and whisk it in until smooth.

  4. Step 4. Add the tofu and wakame and warm for 1 minute. Do not boil. Top with green onions.
