A hearty miso soup packed with pork, root vegetables, and tofu.

Ingredients

  • 1/4 lb thinly sliced pork belly, cut in pieces
  • 1 tablespoon sesame oil
  • 1 carrot, sliced thin
  • 1 small daikon, cut in half moons
  • 1 potato, cubed
  • 4 cups dashi stock
  • 3 tablespoons miso paste
  • 1/2 block firm tofu, cubed
  • 2 green onions, sliced

Steps

  1. Step 1. Cook the pork in the sesame oil for 3 minutes until no longer pink.

  2. Step 2. Add the carrot, daikon, and potato and stir for 2 minutes. Pour in the dashi.

  3. Step 3. Simmer for 15 minutes until the vegetables are tender and the pork is cooked through.

  4. Step 4. Whisk in the miso, add the tofu, and warm for 2 minutes without boiling. Top with green onions.
