Moules Marinières

Mussels steamed in white wine, garlic, and shallots, served with crusty bread to mop up the broth.

Ingredients

  • 2 lb mussels, scrubbed and debearded
  • 2 tablespoons butter
  • 2 shallots, minced
  • 3 cloves garlic, minced
  • 1 cup dry white wine
  • 2 sprigs thyme
  • 1/4 cup heavy cream, optional
  • 2 tablespoons chopped parsley
  • 1 baguette, to serve

Steps

  1. Step 1. Discard any mussels that are open and do not close when tapped.

  2. Step 2. Melt the butter in a large pot. Cook the shallots and garlic for 2 minutes.

  3. Step 3. Add the wine and thyme and bring to a boil. Add the mussels, cover, and steam for 5 to 6 minutes, shaking the pot once.

  4. Step 4. Discard any mussels that stayed closed. Stir in the cream and parsley. Serve with the broth and bread.
