Chicken Provençal

Chicken roasted with tomatoes, olives, garlic, and herbes de Provence.

Ingredients

  • 3 lb bone-in chicken pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1 onion, sliced
  • 4 cloves garlic, sliced
  • 1 pint cherry tomatoes
  • 1/2 cup black olives
  • 1/2 cup dry white wine
  • 2 teaspoons herbes de Provence
  • 1 lemon, sliced
  • 2 tablespoons chopped parsley

Steps

  1. Step 1. Heat the oven to 400°F. Season the chicken and brown it in the oil in an oven-safe skillet, 4 minutes per side. Remove.

  2. Step 2. Cook the onion and garlic for 3 minutes. Add the wine and scrape the pan.

  3. Step 3. Add the tomatoes, olives, herbs, and lemon. Return the chicken skin side up.

  4. Step 4. Roast for 30 to 35 minutes, until the chicken is cooked through (165°F) and the tomatoes burst. Top with parsley.
