Sole Meunière

Delicate fish dusted in flour, pan-fried in butter, and finished with lemon and parsley.

Ingredients

  • 2 sole or flounder fillets
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons butter, divided
  • 1 tablespoon oil
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped parsley
  • Lemon wedges, to serve

Steps

  1. Step 1. Pat the fish dry, season, and dredge lightly in the flour.

  2. Step 2. Heat 1 tablespoon of the butter and the oil in a large pan over medium-high heat.

  3. Step 3. Cook the fish for 2 to 3 minutes per side, until golden and flaking. Move to plates.

  4. Step 4. Add the remaining butter to the pan and cook until it smells nutty and turns light brown, about 2 minutes. Add the lemon juice and parsley and pour over the fish.
