Palak Paneer

Cubes of fresh paneer cheese in a smooth, mildly spiced spinach sauce.

Ingredients

  • 1 lb fresh spinach, or 10 oz frozen, thawed
  • 8 oz paneer, cubed
  • 3 tablespoons oil or ghee, divided
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 green chili, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • 2 tomatoes, chopped
  • 1/2 cup heavy cream or coconut milk
  • 1 teaspoon salt

Steps

  1. Step 1. Blanch the spinach in boiling water for 1 minute, drain, and blend smooth with a splash of water.

  2. Step 2. Fry the paneer in 1 tablespoon of oil until golden on 2 sides. Set aside.

  3. Step 3. Cook the onion in the remaining oil for 8 minutes. Add the garlic, ginger, chili, and cumin for 1 minute. Add the tomatoes and cook for 6 minutes.

  4. Step 4. Stir in the spinach puree, salt, and garam masala. Simmer for 5 minutes.

  5. Step 5. Add the cream and paneer and heat through for 3 minutes.
