Pollo al Ajillo
Chicken pieces browned and braised with a whole head of garlic, white wine, and herbs.

Ingredients
- 3 lb bone-in chicken pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup olive oil
- 1 head garlic, cloves peeled
- 1/2 cup dry white wine
- 1/2 cup chicken stock
- 2 sprigs thyme
- 1 bay leaf
- 2 tablespoons chopped parsley
Steps
Step 1. Season the chicken. Brown in the oil in a large pan for 6 minutes per side. Remove.
Step 2. Cook the garlic in the same oil for 2 minutes. Add the wine and scrape the pan.
Step 3. Return the chicken with the stock, thyme, and bay leaf. Cover and simmer for 30 minutes until cooked through (165°F).
Step 4. Uncover and cook 5 minutes to thicken. Top with parsley.
