Sesame Noodles

Cold or room-temperature noodles in a nutty sesame sauce, topped with cucumber and green onion.

Ingredients

  • 12 oz fresh or dried wheat noodles
  • 1/4 cup Chinese sesame paste or tahini
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 3 tablespoons warm water
  • 1/2 cucumber, cut in matchsticks
  • 2 green onions, sliced
  • 1 tablespoon chili oil, optional

Steps

  1. Step 1. Cook the noodles as the package says. Drain, rinse in cold water, and toss with a drizzle of sesame oil.

  2. Step 2. Whisk the sesame paste, soy sauce, vinegar, sugar, sesame oil, garlic, and warm water until smooth and pourable.

  3. Step 3. Toss the noodles with the sauce.

  4. Step 4. Top with the cucumber, green onions, and chili oil.
