Chicken Lo Mein

Soft egg noodles tossed with chicken and vegetables in a savory soy and oyster sauce.

Ingredients
- 8 oz fresh lo mein or spaghetti noodles
- 1 lb boneless chicken breast, sliced thin
- 2 tablespoons soy sauce, divided
- 3 tablespoons vegetable oil, divided
- 2 carrots, cut in matchsticks
- 2 cups sliced cabbage
- 1 cup sliced mushrooms
- 3 cloves garlic, minced
- 2 tablespoons oyster sauce
- 1 teaspoon sesame oil
- 3 green onions, sliced
Steps
Step 1. Marinate the chicken in 1 tablespoon of the soy sauce for 10 minutes. Cook the noodles as the package says, drain, and rinse.
Step 2. Heat 1 tablespoon of the oil in a wok over high heat. Cook the chicken for 4 minutes, until cooked through and no longer pink. Move to a plate.
Step 3. Add the remaining oil, carrots, cabbage, mushrooms, and garlic. Stir-fry for 3 minutes.
Step 4. Add the noodles, oyster sauce, remaining soy sauce, and chicken. Toss for 2 minutes until hot (165°F in the chicken).
Step 5. Finish with the sesame oil and green onions.
