Smoked Baked Beans

Baked beans simmered in the smoker under a rack of meat, thick with brown sugar and bacon.

Ingredients

  • 1/2 lb bacon, diced
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 3 cans (15 oz each) pork and beans, drained
  • 1/2 cup BBQ sauce
  • 1/3 cup brown sugar
  • 1/4 cup molasses
  • 2 tablespoons mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon BBQ dry rub

Steps

  1. Step 1. Cook the bacon in a skillet until crisp and cooked through, then cook the onion and pepper in the fat for 5 minutes.

  2. Step 2. Mix everything in a foil or cast-iron pan.

  3. Step 3. Smoke at 250°F, uncovered, for 2.5 to 3 hours, stirring every hour, until thick and glossy.

  4. Step 4. Rest 10 minutes before serving.
